The Ham Limited Edition Alta Gastronomia 2013 consists of 30 hams, selected from among the most extraordinary FISAN Alta Gastronomia Ham pieces, cured between 58 and 60 months in natural cellars, in a dark and quiet atmosphere, with the utmost care and large doses of patience. Perfection is achieved when, more than four years after its selection, this ham is consumed at a temperature of around 22˚ C. Its flavour is sweet and lingering, its aroma rich and fresh, and its colour dark pink, with an excellent fat marbling that gives it its melt-in-the-mouth texture. Tasting recommendations include always slicing it with a carving knife and consuming it within a short period of time, not more than five or six days, due to its fast oxidation once opened.

YEAR 2013
Due to the weather conditions, the montanera was characterized by fruit scarcity in the holm oak fields. Nevertheless, as a result of the late autumn rains, although not plentiful, the fruits were large and high quality, contributing to a superior campaign with fewer pieces.
