Ham Limited Edition Alta Gastronomia 2011 consists of 42 ham pieces of the most extraordinary FISAN Alta Gastronomia Ham, cured for more than 60 months in natural cellars in a dark and quiet atmosphere, with great care and large doses of patience. Perfection is achieved when, more than four years after its selection, this ham is consumed at a temperature of around 22˚ C. Its flavour is sweet and lingering, its aroma rich and fresh, and its colour dark pink, with an excellent fat marbling that gives it its melt-in-the-mouth texture. Tasting recommendations include always slicing it with a carving knife and consuming it within a short period of time, not more than five or six days, due to its fast oxidation once opened. YEAR 2011 During this montanera, fruits were large and plentiful. The heavy November and December rains favoured the growth of high and abundant grass in the holm oak fields, stimulating and encouraging pigs to move. Likewise, the cold months of December and January contributed to the proper preservation of the fruits until February and March, thus allowing full use of them by our pigs.
