LIMITED EDITION ALTA GASTRONOMIA HAM 2020 VINTAGE

 

This exclusive ham is part of the Limited Edition, 2020 vintage. Each piece has been carefully selected by the FISAN family from the very beginning in the ‘dehesa’ meadows, the place where our Iberian pigs have been meticulously reared with complete dedication. The ham reaches its perfect point of maturity after a curing process of approximately 60 months in natural cellars, locations that maintain the perfect level of darkness and silence.

This new vintage shows FISAN’s commitment to quality and excellence. Right from the first slice, the Alta Gastronomia ham, 2020 vintage offers a fresh and deep scent, with a deep rosé colour and perfect fat infiltration that will melt in your palate. In order to enjoy it fully, we recommend consuming it at 22ºC, the temperature that best displays the ham’s flavour and aroma during each bite.

This is an unequalled Limited Edition that combines the century-old experience and patience achieved by FISAN on each slice, which creates a unique experience for Alta Gastronomia ham enthusiasts.

2020 Vintage

This year brought a generous yield of nuts thanks to rainfall at the optimal moment; this ensured a great campaign for Bellota products in 2020. The abundant acorns this year together with the grass growth fostered by the latest rains guaranteed a fantastic grazing period for our Iberian pigs, which in turn resulted in FISAN’s exceptional Iberico Bellota products.

Organoleptic characteristics: 

Colour: The hints of dried fruits and nuts stand out, as well as the sweet tones typical of acorns and thanks to the optimum salt content. Homogeneous bright reddish colour.
Its flavour is smooth and mellow, with an aromatic taste that lingers on the palate.
Odour: Characteristic cured odour.
Appearance: Consistent and juicy.
