The Iberico Bellota Longaniza Salchichon, a type of sausage, is one of the most traditional, yet less known traditional products from Guijuelo. It is distinguishable by its light traces of paprika and its exquisite aroma. Its bellota pork meat has never been frozen, according to traditional customs. The curing process takes place in natural dryers, a great factor in forging its character.
