The FISAN Iberico Bellota Pork Shoulder 50% Iberian Breed is relatively lean and intensely savoury. Its perfect curing point, reached after more than thirty-four months in natural cellars, is what contributes to the gas infiltration being uniform and the flavour being of a unique profundity.
