The Standard

Iberico Qualities

The quality standard for meat, ham, shoulder ham, and loin (Royal Decree 4/2014) establishes the quality requirements to be met and the system for their identification by means of a seal or label. This standard is a firm commitment by the Ministry to ensure quality, transparency, and information about the characteristics and conditions of the manufacturing process of Iberico products; so that consumers may make the right decision according to their needs at the time of purchase.

The label must include the products’ sales description. Hence, there are classifications for Iberico ham: bellota, cebo de campo, or cebo. The product label must also include the percentage of Iberico breed.

Colour seals

Precinto negro para jamón, paleta y lomo de bellota 100% ibérico FISAN

100% IBERICO BELLOTA HAM

Black seal.

Only 100% Iberico Bellota Ham, Shoulder Ham, and Loin.

This label guarantees that:
1. The pig’s mother and father are 100% Iberian breed.
2. The animal has fed on bellotas and other natural resources in the dehesa during the fattening period.

Precinto rojo para jamón, Paleta y Lomo de Bellota Ibérico FISAN, tanto del 75% como del 50% raza ibérica

IBERICO BELLOTA HAM

Red seal.

Iberico Bellota Ham, Iberico Bellota Shoulder Ham, and Iberico Bellota Loin. They can be 75% Iberian breed or 50% Iberian breed.

This label guarantees that:
1. The mother is 100% Iberian breed, and the father can be 50% Iberian breed (the result being 75% Iberian breed) or a Duroc pig (the result being 50% Iberian breed).
2. The animal has fed on bellotas and other natural resources in the dehesa during the montanera stage.

CEBO DE CAMPO IBERICO HAM

Green seal.

Identifies the Cebo de Campo Iberico Ham, Cebo de Campo Iberico Ham, Cebo de Campo Iberico Shoulder Ham, and Cebo de Campo Iberico Loin.They can be 100%, 75%, or 50% Iberian breed.

This label guarantees that:
1. The pig’s mother and father are 100% Iberian breed, or the mother can be 100% Iberian breed and the father 50% Iberian breed (the result being 75% Iberian breed), or a Duroc pig (the result being 50% Iberian breed).
2. The animal has fed on natural pastures and feeding stuffs during the fattening period.

The origins

A unique ecosystem worldwide because of its peculiarities, biodiversity, and natural wealth, characteristic of the southwest of the Iberian Peninsula, the dehesas selected by FISAN are extensions of holm oak forests that have withstood the test of time.
